Culinary Memories of Trieste














Most visitors to Italy would agree that every meal - from the pasta, buffalo mozzarella, crusty, sauce-sopping bread to insalata caprese - is simply "delicioso!" But in Trieste, there is one other delicacy that you must eat to make your culinary experience complete, mussels: fresh mussels over pasta, in stews, steamed, baked or fried. Our family ate at a restaurant overlooking the waters of Trieste where bobbing barrels defined each cooperative mussel farm (there are 17 co-ops). After reaching commercial maturity, one-year-old mussels grown on sturdy ropes are hauled up by boat cranes, separated and cleaned. Each co-op can harvest up to 300 tons of mussels per year and if I lived in Trieste, I would be one of the biggest customers. If you have the good fortune to go to Trieste be sure to order a platter of mussels with some bread or pasta to sop up the mouth-watering sauce. It is my idea of culinary heaven. Ciao!
