The Last of the Costata Romanesco

Costata Romanesco squash is an Italian heirloom vegetable known for its prominent ribs and excellent, mild taste. Our plant has given us a bountiful harvest all during the summer months and into fall and now that winter is almost here, it is still bearing 5 more. Although a bit on the small size, I decided to harvest them and serve them with my one remaining, rotund Tondo di Piacenza squash for a Thanksgiving side dish. After slicing, I stir-fried them in a bit of olive oil, added salt and pepper and sprinkled with freshly grated parmesan cheese. It was a hit with our guests and come next spring, I plan on growing two more Costata Romanesco and one Tondo di Piacenza because of their hardiness, vigor, abundant squash and oh so "delicisioso" taste.
