Put a new twist on an old saying, "When life hands you tomatoes, make a tomato sandwich!" Although it is September, my Mighty 'Mato crop keeps bearing and bearing the most amazing tomatoes in a rainbow of colors and sizes. My neighbors, friends and family have all received baskets of tomatoes, some have been frozen to make gallons of fresh tomato sauce, others have been used in delicious salads, but lately I have become addicted to making homegrown tomato sandwiches. Just toast some bread, slather on mayonnaise, add a dash of salt to the sliced tomatoes (Momotaro and Chocolate Stripe are particularly scrumptious in sandwiches) and avocado, pile on sprigs of fresh basil and my oh my!
